BRAZIL NUT BUTTER & JAM STUFFED DATES
Medjool dates are the fruit of the Medjool cultivar of date palm trees, scientifically known as phoenix dactylifera. And here at Amelia Nour, we're obsessed with them! The impressively endless health benefits of these juicy little gems ranges from optimising your digestion with their maxed-out dietary fibre content, to providing the essential nutrients that promote bone-mineral density (they contain notable levels of magnesium, manganese, copper, and calcium: all of which are vital nutrients to maintain bone mineral density in the body).
Plus, alongside being bountifully nutritious, they're exceptionally delicious! This little recipe can be prepared in minutes (I eat a different variant of this recipe almost everyday for breakfast!) and you can also make it look super pretty on a platter for your friends when they come over a cuppa and a gossip.
My favourite nut butter to have in this recipe is brazil nut butter for its earthy taste and because brazils boast being one of the healthiest nuts available, due to their unusual selenium content - Selenium is a vital trace mineral that has extremely strong antioxidant powers, plus the ability to fight free radicals and sooth inflammation. BUT, chose your favourite and switch up your jam and nut butter combos each time!

to sprinkle on top: pink Himalayan salt, finely chopped vegan dark choccie, finely chopped nuts of choice, coconut flakes - go wild!

Carefully cut the dates in half and remove the stone. With your fingertips, carefully mould the date into a little more of a mini boat shape.
Use a teaspoon to place the nut butter inside each date and add some jam on top.
Sprinkle each date with your choice of topping
